NorthStar Cafe, with three locations, is a favorite Columbus spot. At breakfast, their ham and cheese scone is amazing, as are their sweet potato hash, and their prosciutto and poached eggs on rosemary focaccia. Later in the day, their great salads, peanut slaw or Sweet Basil Burrito might call to me. Customers flock there every Earth Day, when they offer their excellent veggie burger for free.
This is my attempt at NorthStar Cafe’s yummy Buddha Bowl, which features brown rice; steamed cauliflower, carrots and broccoli; and chicken or tofu, topped with Thai peanut sauce. Joe and I think my version comes very close and savored every bite. You can vary the veggies according to your preference. My sister wants red pepper and zucchini, for example. I didn’t provide ingredient amounts because that’s up to you and your crew.
Full disclosure: I added more peanut sauce to my bowl after taking the photo, in which I wanted the other ingredients to show!
Buddha Bowl with Peanut Sauce and Chicken
Brown rice, cooked
Cauliflower florets, steamed
Rainbow or regular carrots, cut in bite-size pieces and steamed
Broccoli florets, steamed
Chicken breast, grilled, poached or roasted and sliced or chopped
Thai peanut sauce (see the peanut sauce recipe on this blog)
Spoon hot rice into your bowl. Top with vegetables and chicken (or tofu) and slop on, er, drizzle on peanut sauce.
