When you trim fresh Brussels sprouts, do you throw away those tender little leaves that fall off? I’ll stop if you will!
I like to roast sprouts, but I don’t use the leaves because they tend to burn before the rest is cooked. It occurred to me that grocers charge about $3 for a bag of shaved Brussels sprouts, red cabbage and other healthy goodies to add to salads. So why not throw the best of the extra leaves into fresh green salads or toss them into soup? I advise chopping them if the sprouts are large. I also wonder about frying the leaves to use as a garnish.
